A trout farm on the Aubrac plateau, 800 metres up, fed by spring water. This is where our organic smoked trout comes from — in the starters, in the croque and at breakfast.
BRUNO BLONDELET, WINEGROWER — Le Bouchot, Pouilly-sur-Loire (58)
His Pouilly Fumé is served by the glass all year round. A straight, unshowy Loire sauvignon that goes as well with the trout as with the cheeses.

Our six Burgundy snails come from this Paris house on rue Fondary, founded in 1894 and now the city's benchmark for snails.

Organic craft brewery in the Cher. They brew Yvonne, our gluten-free organic pils on tap — 100 % French.
CHÂTEAU CALISSANNE — Lançon-Provence (13)
An estate in the Coteaux d'Aix, at the foot of the Côtes range. Its rosé is on our list, by the glass and by the bottle.
